Light Soup

Ghanaians usually eat light soup – some sort of spicy tomato soup with vegetables and fish – with fufu. Eaten with rice it is supposed to be a healthy, light dish helping you to recover from illness.

You need:

3 garden eggs
2 pieces of okra
2 tomatoes
½ red onion, peeled
3 small red peppers
Fish filet
1 small tin of tomato puree
½ cube of vegetable stock
Salt
Red pepper seasoning (a spice mix you can buy everywhere in Ghana. If you can’t get hold of it, replace it with chili)

How to prepare it:

Wash the tomatoes, garden eggs, peppers and okra. Cut off the ends of the okra. Remove the stem of the garden eggs and cut the surface crosswise.  but don’t chop them. Boil the vegetables in a pot with water until they have softened. Add the tomato puree and leave to simmer for 5 minutes. Take out the onion, the peppers and the tomatoes and grind them with a mortar and a pestle before adding them to the soup again. Add the fish filet and the vegetable stock. Season to taste with salt and red pepper and serve with rice or fufu.
