The secrets of pepper sauce (also just called pepper in Ghana), a delicious, spicy tomato salsa, are fresh ingredients and the method of preparation: Ghanaians use a clay grinding bowl called asanka and a wooden masher to prepare the sauce. While using mortar and pestle definitely takes longer, it’s probably worth the effort as making use of an electric blender comes with a loss of taste.
2-3 fresh tomatoes

How to prepare it:
The preparation is easy and quick – although it might take some practice if you’re not used to grinding: Just wash, chop and grind the tomatoes, pepper and onion using mortar and pestle. Add salt to the mix and serve cold with banku and grilled fish. To make it less watery, you can simmer it for about 20 to 30 minutes.
